In Alberobello, pasta is not kneaded: it is celebrated

Between conical stone walls and aromas that evoke childhood.

The experience begins in a trullo house, a typical Apulian construction with a conical roof made of dry stone. These dwellings, unique in the world, date back to the 14th century and were designed without mortar, so they could be quickly dismantled. Today, centuries later, they remain standing as witnesses to a history that is also transmitted through taste. Under its cool white dome, the essential ingredients are arranged: flour, water, and expert hands.

Guided by a local host, you discover the magic of preparing orecchiette, cavatelli either tagliatelle, depending on the day. The dough takes shape while stories are shared from southern Italy, where cooking is a ritual and flavor is passed down from generation to generation.

It all concludes with a meal served inside the trullo or in its garden, accompanied by local wine and the tranquil silence of the Puglia region.

To knead inside a trullo is to touch the soul of Italy with your hands.
